What we call peanuts in North America are known as g-nuts (ground nuts) in Uganda. I put these simple ingredients together during my first training visit to the bakery in October 2021, mostly to teach the children and to give them pleasure. Butter was too expensive, so we used non-hydrogenated vegetable shortening. I’ve written the recipe for butter, but shortening is acceptable.
Yield: 21 cookies at 60 g
250 g Butter, slightly softened
250 g Sugar
10 g (1/2 tsp) Salt
200 g G-nut butter, smooth
100 g (2 large) Eggs
55 g G-nuts, roasted
55 g Chocolate, chopped
370 g All-purpose flour
4 g (1 1/8 tsp) Baking powder
Method:
Sift the baking powder into the flour and swirl it around. Mix the roasted g-nuts and chopped chocolate together in a bowl.
Using the paddle attachment for a stand mixer, cream the butter, sugar, and salt until they are smooth and homogenous, about 3 minutes. Add the g-nut butter and mix until smooth and evenly incorporated. Add the eggs and mix until smooth. Add the g-nuts and chocolate and mix just until they are evenly incorporated. Add the flour/baking powder and mix just until incorporated.
Scale the cookies at 60 g, round and flatten them; place onto sheet pans. Alternatively, the cookies can be scooped with an ice cream s.
Bake the cookies at 360°F for about 18 minutes, until the bottoms are slightly browned.
